Here’s a great big shout out to Terrie for wrangling us every month and coming up with the best challenges.

If you are coming here from Nicky’s welcome, I’m so glad that you are here!

Wrap in saran wrap, then wrap in aluminum foil and return to the freezer.

You can keep it frozen up to 6 months.

I like to keep it in the freezer until right before serving.

    1. Jodi I’m not much of a baker either. Unless you count cookies! However, 3 times a year I bake and this is one of them. So you know it has to be easy if I’m making it!

    1. Thanks Cindy. It’s super easy and tastes really good. I got this recipe from a friend many years ago and we make several for the holidays every year.

    1. Yes, it is great to make ahead. I make mine mid-October and freeze. I make enough for our family get togethers, and a few extras to give away. I love it because it satisfies the sweet tooth without being overly sweet.

  1. Beautiful pumpkin roll and great instructions! I haven’t had one of these in years, but now I need to make one. 🙂 Pinned!

    1. Thanks Carol. My family loves it and it’s special to me as a dear friend gave me the recipe 30 years ago! So making it every year reminds me of that friendship!
